Homemade Waffles with Strawberries & Whip Cream

Since it’s Memorial Day Weekend, and a perfect time for breakfasts that are a little more on the special side, I thought I would share this recipe from my friend Karen. You can even add blueberries on top to make it red white and blue and a bit more patriotic. 😉

Many of you know Karen as a moderator on the TotallyTarget Forum, and she also does a tremendous job of helping me with my giveaways and other things around here on TT. But Karen is also a fabulous cook and I have managed to talk her into sharing one of her recipes & I hope there will be more to come. 

Keep in mind if you are short on time, you could substitute with a boxed waffle mix and still use fresh fruit and fresh whipped cream to still make a delicious dish- but here is her recipe from scratch…

  • 2 cups Cake Flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoon sugar
  • 4 eggs, separated
  • 1/2 teaspoon Vanilla
  • 4 tablespoons unsalted butter, melted
  • 2 cups milk
     

Directions: Preheat waffle iron. Sift together flour, salt & baking powder in a bowl and set aside. In second bowl mix together egg yolks and sugar until yolks turn pale yellow and sugar is dissolved. Add vanilla, butter, and milk & combine. Whisk the egg mixture into the flour mixture just until combined (do not over-mix). In a 3rd bowl beat egg whites with mixer until soft peaks form and then gently fold egg whites into batter with a rubber spatula. It’s important not to over-mix.

Coat the waffle iron with cooking spray and cook waffles until golden brown. Top with fresh made whipping cream (just whip 1 cup heavy whipping cream with 1 tablespoon sugar until it gets to the right consistency) and then pile on fresh strawberries and/or blueberries.

My 70% Off Target After-Easter Clearance Trip

So I managed to sneak out early afternoon to try my luck at 70% Off Easter and I was so happy to find still a lot left at my store. I found quite a few super-cheap goodies- like Kraft Bunny Mallows marshmallows for .35 cents a bag, and I found a ton of Easter-themed bags of Pepperidge Farm Goldfish for just .59 cents each so I bought six ‘cuz I love ’em too. 🙂 I also found a Fisher Price Little People Wheelies car and used the 10% Off Select Fisher-Price Items (including Little People) Target Web Coupon x5/12.

There were also still lots of PAAS products at my store so I picked up a pack of the Doodle Pens for next year. I also bought spring themed stickers, a craft kit, an awesome mini Bundt Cake Pan, window clings, plastic eggs, and some easter grass. I found a tin pirate pail for $1.50 I will use as a catchall in Austin’s room, Hot Wheels Puzzle Erasers for .59 cents and I picked up a few other things for a friend. I spent a total of $16.51 and saved $55.02 and successfully resisted the urge to buy any chocolate! 😉

Don’t forget to take a good look around the store too- sometimes not everything will make it to the clearance area and it’s worth scoping out the store a bit. I found my Goldfish on an endcap up near the front register- and it’s probably why it was so well stocked since there was no clearance sign in sight! I hope you all find/found some great Easter clearance bargains today as well!

Snackurday: Birds Nest Cookies

Today Amanda has a creative way to use Easter Jelly beans (or Cadbury Eggs) to make a super cute and tasty dessert.  Birds Nest Cookies are fun to look at, and delicious to eat!  They do take a while to bake, but the resulting treat is well worth the wait.

Snackurday: Over the Rainbow Treats

Yummy and easy to make Rainbow Treats! These are super good and so easy to make!

Amanda has a clever idea for a sweet snack that is perfect for St. Patrick’s Day. The recipe is somewhat similar to Rice Krispies treats, but it uses Fruity Pebbles as one of the main ingredients to give it lots of color! 

These Over the Rainbow Treats are sure to delight kids of all ages, and you can mix up the ingredients a bit to cater to your family’s preferences.
